Grapes of the utmost quality are carefully chosen from vineyards that uphold the highest standards of viticulture practices.
Each cluster is hand-harvested, ensuring a delicate touch and the selection of only the finest fruit.
Before entering the fermentation tanks, the grapes undergo a meticulous hand-sorting process, where any subpar berries and leaves are expertly removed.
Instead of mechanically crushing the grapes, we opt for the traditional method of whole-cluster foot crushing. This technique minimizes the release of harsh tannins, preserving the wine's future elegance.
During fermentation, our winemaker lovingly hand-mix the "must" twice daily, nurturing the wine's development.
Once fermentation is complete, we allow the wine to naturally flow out of the tank (free run), foregoing mechanical pressing. This choice safeguards against the release of any harsh elements into the wine, even though it may result in a smaller overall yield.
Our commitment to preserving the wine's purity extends to the absence of filtration. While this may lead to some sediment in the bottle, it also ensures the retention of intricate aromas and nuanced taste notes. To fully savor the wine, we recommend using a decanter or pouring it slowly.
