A bit of history: In 1917, the Austrian army invaded northeast Italy after winning the Battle of Caporetto. Austrian soldiers looted local homes for food, but residents of Treviso and its surroundings hid their cheese in barrels filled with grape pomace, the remnants of grapes used in winemaking. When the raids ended, the residents of Treviso recovered the hidden cheese and pioneered a gastronomic innovation: the cheese acquired a thick purple crust and a distinct, pleasant wine flavor.
