We source a high-quality Parmesan-style hard cheese from a small family-run dairy in Uruguay, and then refine it in two steps: two months immersed in red wine, followed by two months of ageing in a cold chamber. During this time, the cheese develops a natural purple rind, an expressive rich, savory flavor with subtle fruity notes. It is ideal for a cheese board or to enjoy with a glass of red wine before or after the main course.
This cheese is inspired by a traditional Italian technique from 1917. During the war, residents in the Treviso area hid their cheeses in barrels filled with grape pomace – the leftover skins and pulp from winemaking – to protect them from soldiers. When they recovered the cheese, it had developed a thick purple crust and a pleasant wine flavor.
